Why Triana Coffee?
A: We do things differently. We only sell organic coffee. We roast using zero-emission, electric, super high-tech fluid air bed technology. Coffee is very porous, and it easily absorbs atmospheric contaminants. Our coffee is exposed to only filtered, superheated air when roasting. You taste only the fine coffee you paid for, without unwanted chemical byproducts usually associated with gas roasters, which in addition to combusting gas, are slathered in grease and oils to keep the machine's moving parts working. We have none of that with our roaster. Further, we roast and sell locally, using no shelf stabilizers or preservatives. We're 100% natural. Finally, we strongly support our local Nashville community. You can occasionally find what others call organic coffee. They're selling you coffee that was likely delivered to a roastery as organic, but that's only half the story. They then contaminate it through their roasting process. 99.9% of commercial roasters then roast that green, organic coffee by combusting natural gas, or liquid propane. This process releases Carbon monoxide (CO): A toxic gas from oxygen deficiency; common in gas fired roasters, Nitrogen oxides (NOₓ): Formed when atmospheric nitrogen reacts at high heat, Methane (CH₄): Unburned hydrocarbon, especially from gases, and other Volatile organic compounds (VOCs): Trace amounts from fuel (e.g., expressed as methane equivalents); propane may release fewer than natural gas due to its composition.
What are you roasting right now?
A: What we roast depends on when we're roasting. Beans have a season in all parts of the world. We always roast the finest organic beans available. You'll never get anything less than the best in season beans we can get to our roastery. Shop here or check out our Instagram for details.
What does your company name mean?
Triana, a historic neighborhood in Seville, Spain, served as a vital merchant trading hub where ships from the Americas and Africa docked along the Guadalquivir River during Spain's colonial era. This riverside district's strategic position facilitated maritime commerce, contributing significantly to Seville's prominence as Spain's primary port for New World trade while maintaining its distinctive character through pottery traditions and flamenco heritage. Triana served as one of western Europe's first ports to import coffees from around the world, as early as 1645.
What does "Specialty Coffee" mean
In the context of coffee, the term "specialty" refers to coffee that is of exceptionally high quality, typically graded 80 or above on a 100-point scale by professional coffee tasters, such as those certified by the Specialty Coffee Association (SCA). We only sell the very finest of "specialty" coffees. You are unlikely to find coffee of this quality elsewhere in the Nashville market.
What's the significance of "SUPREMO" as seen on the bottom of your logo?
Supremo, in Spanish, in this context, denotes a product of the very highest order. Supreme. The best. In English, we might say "none better."
What kind of coffee roaster do you use?
We've tried all the big brands, and most left us wanting. Most commercial coffee is roasted the same way today as it was 100 years ago. We wanted to leave the toxic gas combustion byproducts behind, and deliver our exceptional coffee roasted the way nature made it. We could only do that with the newest, bleeding-edge technology of fluid air-bed roasting. Zero emissions. Zero toxic combustion by-products leeching into your "organic" coffee. Our friends at Air Motion Roasters met our needs, and now we roast exclusively on their fine roasters.
I'm interested in coffee roasting. Can you recommend a roaster for a small shop or artisanal roaster like yourself?
Yes! We're very active in the coffee community, and we've talked to a lot of roasters about their experiences. We've tried a few roasters. At the end of the day, all roasters seek to do the same thing, and generally can with a skilled operator. Coffee roasters get a lot of use, and there are moving parts and maintenance involved. That means you're going to need customer support and, perhaps, parts and professional service at some point. This is what you should focus on. In our opinion, the big brand names have infrastructure and resources to meet your ongoing needs. Diedrich, Probat, Giesen. All are great companies, and make top-shelf products. Diedrich support stands out for excellence, and they're American made.
We choose to sell only exceptional organic coffee, roasted without toxic combustion byproducts. We therefore use Air Motion Roasters, which utilize electric, fluid air-bed roasting. Zero emissions. Zero toxic combustion byproducts. You get clean, toxin free coffee, the way nature made it.
The only roaster manufacturer we cannot recommend, based on our personal experience, is San Franciscan Roaster.
Do you teach a coffee class or a roasting class?

Do you rent time on your roaster?
Not normally. Our roaster stays very busy. Reach out via our contact form. We'll keep in touch if we have extra capacity.
Can you give coffee to my charitable organization?
We enjoy selling exceptional coffee which is in very limited circulation--and the cost of our green, unroasted beans reflects that. We sell with the thinnest of margins in order to make such fine coffee available in the Nashville market. We then take those modest profits and support our community. Without our low-margin revenue stream, we couldn't meet our expenses. So, in short, it's very rare for us give coffee away as it makes our efforts unsustainable.
You're a social business. To whom do you direct your profits?
We have priorities, and we feel our priorities have the most positive impact on our community. Generally speaking, we prioritize local environmental stewardship, educational leadership, and Christian Wilderness Missions for those recovering from life's many challenges.
